If you are looking for a small onion with a mild flavor that can be eaten raw in salads or cooked in stir fries and soups to add a light onion flavor, this is the perfect choice.
Spring onions look similar to green onions or scallions, but they have a small bulb at the base instead of a flatter white area. The flavor of spring onions is more intense than that of a scallion or green onion, but milder than a normal yellow cooking onion.
Beef Stew with Spring Onion & Cream Cheese Mashed Potatoes
Ingredients
1kg Cubed Beef (or protein of your choice)
1&1/2 Tsp salt
1Tsp Simply Clean Foods organic peppercorns
2Tbsp Olive Oil
2 Garlic cloves Minced
1Cup Simply Clean Foods FD diced onions
2Cups Simply Clean Foods FD shredded carrots
½ Cup Celery
1l Water
2 Bay Leaves
Simply Clean Foods organic Thyme
Mashed Potatoes
500g Simply Clean Foods diced potatoes
1/2tsp salt
2Tbsp Butter
2Tbps Simply Clean Foods Spring onions
2Tbsp Simply Clean Foods Chives
2Tbsp Simply Clean Foods Cream Cheese
Simply Clean Foods organic Parsley
- Marinate beef (or protein of choice) with salt and pepper for 40 minutes.
- Heat pan with olive oil and add beef. Fry until brown. Remove from pan and set aside.
- Using the same pan add olive oil and garlic and stir fry until fragrant. Add onions and toss until onions are translucent. Add carrots, celery, beef, water, bay leaves and thyme. Cover and allow to cool for 10-151 minutes on a medium heat.
- Preheat oven to 392 degrees (Fahrenheit). Move pan to oven and bake for 45 mintues.
- For Mash Potatoes: Mash Cooked potatoes. Add salt, butter, spring onions, chives, cream cheese and parsley.
- Plate stew over mash and indulge in the ultimate bowl of comfort!
