Quinoa Salad with Feta & Peaches

Ingredients

Vinaigrette:

2 Tbsp Olive Oil

3 Tbsp Lemon Juice

2 Tbsp Apricot Jam

Pinch of Kosher Salt

 

Salad:

5 oz. Mixed Greens

2 Cups Simply Clean Foods Peaches/Strawberries

1 Cup Walnuts- Chopped

1/3 Cup Simply Clean Foods Cranberries

¾ Cup Feta Cheese

1/2Cup Simply Clean Foods Quinoa

½ red onion chopped

Dressing:

1. In a food processor, combine olive oil, jam, lemon juice and salt. Pulse until smooth.

Salad:

1. Assemble salad – in a large bowl combine greens, peaches, walnuts, feat & cooked quinoa. Add sliced red onion
2. Drizzle ½ dressing on top of the salad and toss. Add rest of the dressing and toss again
3. Serve immediately.
